It you cut a potato in half you will see that it has distinct layers, these layers are interesting because their composition varies.

1) Skin layer; has more protein that fat and more minerals than main flesh. |

2) Thick fibrous layers under the skin has more protein and minerals than the main flesh. |
3) The main flesh has more carbohydrates and less protein, fat and minerals than the other two layers. |
A potato contains 81% water, little protein or fat but is an important supplier of minerals, notably potassium and a little calcium, vitamins B and C. The food value of potatoes is not great but as they are eaten on a regular basis this value becomes very significant to the diet. |
