This vegetable is no relation to the globe artichoke, neither does it have anything to do with Jerusalem. The name is thought to be derived from the Italian word for sunflower, girasole.
Jerusalem artichokes resemble potatoes but they are not as large or smooth.
Choose tubers which are not too knobbly, as these are difficult to peel.

They can aso be used in soups, stews and for gratins, and raw, very thinly sliced, in salads.
