SWEET POTATO - EDDOE

Sweet potato is the edible tuber of a climbing plant, originally from South America which was brought to Europe in 1493 by Columbus.

The tubers have pale reddish brown skins and yellow flesh. A crisp firm texture which needs prolonged cooking to soften this product.
These can weigh from 30g/1oz to 500g/1lb with flesh colour varying from white, yellow, pink to orange. The flavour is somewhat similar to the common potato with a slight nutty taste.

Scrub well and peel if necessary.
Cooking Methods
They can be used and cooked like ordinary potatoes (chipped, baked boil, fry, roast, steamed or mashed) but they have a sweetish chestnut flavour.
They can also be stir fried or sautéed from raw providing the cut is small ie. julienne or baton.
