As many as 40 varieties of potatoes are grown by British farmers, 15 of these varieties are grown in large numbers, yet you rarely see this offered in the shops by name.

Each type of potato has different properties and that affects its cooking ability.
The Potato Marketing Board has made the labelling of potato sacks compulsory so that the type of potato and the farm of origin can be identified and action taken if the product is sub-standard.
Quality
In grading potatoes farmers must remove potatoes that are:-
damaged potatoes * Unsound * Bruised or damaged by frost or pests
* Tainted, damaged or diseased * Affected by greening, hollow heart or water logging.
* Badly mis-shapen.
