OKRA (GUMBO, LADIES FINGERS)
These are green pods of Ethiopian hibiscus plants much used in Greek, Indian and American cookery.
Choose the smallest fresh looking pods.
Preparation & Cooking Methods
Wash, wipe dry and cook for 10-15 minutes in boiling water. Toss in melted butter.
They can also be sliced and used in vegetable curries.
Take care not to over-cook or they will exude a slimy, sticky juice.
However, Okra is useful in producing a thickening agent for some dishes such as gumbo or soups.
