Leeks have a mellower flavour to that of onion and are used in soups and stocks or braised as a vegetable or plain boiled.
Leeks are best when young and small - baby leeks are sweet flavoured and decorativeand can be used for cold buffet decoration.
Leeks are available all year round and have a white base stem which is green further up.
Leeks should be clean, firm and plump; not limp or damaged with no signs of yellowness or wilting.
