Leeks are used in many stocks, soups and sauces, hors d'oeuvres and savoury products ie. leek and potato pie or tartlettes.

Leek Preparation

If grown in soot or soil trenches will need to be split and well washed before use.
Trim to remove the root and cut away any damaged or inferior outer leaves.
Split from approx. 3 cms from the base to the top with a cooks knife and wash well to clean away any grit or dirt.
