Courgettes have green skin with a white/yellow flesh and are available May till August.
Courgettes are small baby marrow’s and are used for a number of dishes such as Ratatouille.
Courgettes should:

*be firm and crisp

*be not too large (15-20 cms in length)

*not show signs of softness or skin blemish
*not show signs of decay
