Parmesan is the most famous cheese for service with hot pasta and rice dishes. This cheese is full flavoured and used to cohere or top rice dishes prior to service. The cheese can be gratinated under a grill to induce a nutty flavour with a good brown colour.
Grating Parmesan: The cheese is very hard and is grated by hand or by machine to form a fine powder.
Parmesan is purchased pre-grated in 500g units, or you can purchase an electric grating unit especially for this cheese.

Cheddar does not have the same quality as Parmesan and should only be used when Parmesan is not available. Grate the cheese to produce a fine or small size.
