THAWING MEAT
Meat items found in the range list A will be prepared or whole joints requiring preparation. Remove from the deep freeze, place on a plastic tray and place in the fridge.
The larger the item the sooner it needs to be taken out to thaw. Never thaw in warm water, this produces conditions in which bacteria thrive and might in some cases be the cause of food poisoning.
ASK FOR ADVICE
If you are unsure how long food items take to defrost always ask the chef or cook for advice.
A good chef will always keep a freezer log of foods; when they were frozen, their weight and details about the food itself.
