Types of Cabbage
There are several different types of cabbage.
Red cabbage
Should be reddish purple in colour be firm with a closed leaf structure, look for signs of limpness or de-hydration.
White cabbage
should be heavy and compact with a very close leaf structure.
Spring Greens (Chou de printemps)
Should have a good colour with no rust or damage to leaf structure, be crisp; not limp or yellowing.
