Fish
should be stored correctly in a fish
box containing ice, where it will keep
for up to 3 days.
Do not
wash fresh fish when it is delivered.
It should be placed in the fish compartment
of a fridge or on a tray away from
other foods, preferably at the bottom
of the fridge.
Fish
should be stored at a temperature above
freezing point.
Fresh
fish not used within 24 hours of purchase
should be deep frozen having been wrapped
in oiled paper and marked clearly with
weight/portions and type of fish. It
is important to always date each package
seperately.
CURING
Certain
fish are cured to preserve them.
This
can be done by either salting or
smoking (such as haddock, herring
and salmon).
