GROUPS OF FISH
Fish are divided for gastronomic purposes into the following groups:-
1) FRESH WATER FISH - caught in rivers, estuaries and fresh-water lakes
Fresh water trout Fresh water salmon
2) SALT WATER FISH - from the sea
Salt water/ sea fish fall into two main groups:
A) WHITE FISH (Demersal)
B) OILY FISH (Pelagic)
