METHODS OF GRILLING
Grilled foods can be cooked in a variety of ways:
Over Heat
grilled fish
such as charcoal, barbecues, gas or electric grills.
Under Heat
such as gas or electric salamanders (overfired grills).
Between Heat
such as electrically heated grill bars or plates.
TECHNIQUES
There are a number of techniques associated with grilling, including:
CHARRING and SEARING
