Tortellini is a famous
regional dish from Bologna.
The filled pasta is shaped
by placing a filling (made of veal, chicken,
pork, or ham and cheese)inside, which
is seasoned with salt, pepper and nutmeg,and
moistened with melted butter.
The pasta is pinned thinly and cut into
2.5cm (1in) squares.
The filling is placed in
the centre of the square and it is folded
into a triangle which should be sealed
wel. Fold the opposite ends of the triangle
together and seal to form the unmistakable
Tortellini shape.
