Add some flaked or julienne shaped almonds to the beurre noisette just as it begins to colour and pour it over the fillets.
Poisson belle meunière
Add a grilled decorated mushroom, soft herring roe (which has been coated in seasoned flour and also shallow fried) and a slice of peeled tomato. Dress the garnish neatly onto each fillet and serve.
Poisson Doria
To the basic meunière, add some small barrel-shaped pieces of cooked cucumber. These are turned using a small turning knife.
Poisson Grenobloise
Garnish the basic meunière with segments of lemon and capers.
Poisson Bretonne
Garnish the basic meunière with prawns and sliced white mushrooms.
