The
principal difference in composition
and food value between oily and
white fish, is that the oily fish
contain vitamin A & D throughout
their flesh, while white fish
have vitamin A & D only in
their liver. |

The
most oily types (which have the
largest amount of oil in their
flesh) are: Pilchards, Mackerel,
Herrings, Anchovy, Whitebait and
Sprats. |
Oily
fish live in the middle or surface
of the sea, and tend to occur in
shoals at certain seasons of the
year. |
They
feed on "Plankton" which
grows in the sea in the same way
as vegetation grows on land. |

Note:
The bulk of the catch in Whitebait
are young Herrings. The bulk of
the catch in Sardines are young
Pilchards. |
