Suet pastry is usually steamed in a low pressure steamer, products such as steak and kidney pudding or steamed suet roll are steamed for approx. 90 minutes.

The smaller the product the less time it requires in the steamer. Where individual products are cooked by the steaming method the cooking time will be approx. 45 minutes. |
You must ensure that any puddings
in bowls are covered prior to
steaming or the pastry will become
soggy from the condensing steam
vapour.

Steamers need to be pre-set and heated long before cooking starts. Once the dish has been steamed for the required length of time undo the locking mechanism on the front of the steamer unit. |
