If the steaming temperature is too low the paste will be heavy and soggy, or if the paste is over handled it will become tough.

Always use fresh baking powder, you can mix your own using 1 part Bi-carbonate of soda, to 2 parts Cream of Tartar and sieve at least 10 times, then store in an airtight container. |
Do not open the door of the steamer until all the pressure of the steamer unit has been released. Only then should you release the door mechanism to open the steamer unit. |
