One of the most famous of tarts is the Bakewell tart. It is made from a flan of sweet paste, jam is spread over the inside base and frangipane is piped or spread over, a lattice can be used but is not essential.
When cooked the top is brushed with boiled apricot puree and warm fondant is spread over, a decoration of piped chocolate or coloured fondant is then applied and the fondant is drawn with a fine point to form the typical spiders web decoration.
