Vol-au-vents and Bouchées vol au vents
Vol-au-vent means ‘puff of wind’ in French and they are made from good full virgin puff pastry given four full book/double turns or six single turns.
The vol-au-vents is cut from thin 5mm thickness sheets of puff pastry and when baked form a light case for sweet or savoury food items, they are served as entrée with fish, meat or vegetable/salad fillings.
