Hot Savoury Pastry

Unlike the English boiled pie pastry used for pork pie goods, hot pastry is made by fat being rubbed into the flour to form a fine crumb and the boiling water is added to this flour and fat mixture, cleared to a smooth paste.

This paste is not used warm but is cooled and then formed into shape, filled and topped for pies and savoury goods.
