Glutinous rice is used widely in Chinese
cookery and benefits from being gluten
free, this is of benefit, to the growing
number of people affected by the need for
a gluten free diet.
White glutinous rice has had the rice
hull removed, used for confectionery and
baking because of its sticky and sweet
characteristics. This grain is sometimes
used in the brewing of rice beer.

Converted Rice is the
term given to rice which has been par
boiled to remove some of the starch,
while preserving vital vitamins and
nutrients.
Many catering operations
use this form of rice, although it
is more expensive than untreated long
grain rice.
