WHAT IS BAKING?
Baking is a dry method of cookery. Food items are prepared and baked in dry heat in a standard baking oven or forced air convector oven which reduces the time the food takes to cook. Dry heat convects as hot air within the confined space of the oven. Radiant heat also is given off from heat elements and from the wall linings of the oven. Food items also conduct heat via the container or tray they are in.
The heat energy triggers chemical, mechanical and physical changes in the product being baked. The temperature of the baking process is directly related to the nature of the food to be baked.

Baking food in a confined space using dry heat is the oldest method of cookery know to us. Aboriginal clay or earth ovens were used by natives thousand of years ago.
